FLOUR TORTILLA CARE

FLOUR TORTILLA CARE

Unless you’ve been to Mexico, or happen to have an abuela with mad skills, you won’t have tasted tortillas anything like these before. Store-bought tortillas can’t compete with these authentic, home made taco shells. The ones you buy at the grocery store come laced with preservatives and last for weeks sitting on room temperature shelves, ours need a little more consideration...

1. First thing is first, try one fresh out of the bag. Then separate each tortilla individually to prepare for storage and to keep them from sticking together.

2. Next, prep two gallon-sized freezer bags. Place the tortillas that won't be used in the next month in the freezer and refrigerate the rest.

3. Finally, when you are ready to use them, defrost tortillas in the fridge or on the counter top. Warm them up in a skillet or microwave and enjoy!

RECIPE IDEAS

So, why taco? Well, that’s a crazy question, but in case TACOS aren’t enough,
here are a few more ideas for homemade meals to go with our 6” flour tortillas.

So simple, so tasty. Marinated chicken, grilled to perfection in a cast iron skillet, mixed with some veggies cooked in the same sauce and all wrapped up in a Tortilla Familia taco shell for a special delivery…to your tastebuds:

YOU'LL NEED:

•  2 lbs boneless,
skinless chicken breasts

•  1 ½ tsps ground cumin

•  1 tsp chipotle chile powder

•  1 tsp chili powder

•  1 tsp smoked paprika

•  1 tsp salt
•  ½ tsp Mexican oregano
•  ½ tsp ground coriander
•  ½ tsp garlic powder
•  ½ tsp ground black pepper
•  2 bell peppers

•  1 medium onion

•  3 tbsp extra-virgin olive oil

•  1 lime
 16 (6“) flour tortillas

1. Use paper towels to get excess moisture off the chicken breast. Tenderize to uniform 3/4” thickness.

2. Mix all spices in a bowl and then divide in two parts. Use half to marinate chicken - refrigerate from 1 to 8 hours and let the flavor soak in.

3. Slice up peppers & onion then mix together with 1 tbps olive oil. Sprinkle the other half of the spice mixture and stir until coated evenly.

4. Heat up a 12” (preferably cast-iron) skillet to medium-high, then pour the rest of the olive oil in the pan. Add chicken and cook until browned (about 5 minutes a side). When finished, put the chicken to one side to be sliced and diced.

5. Toss in the spiced up veggies to the same skillet and cook for about 5 minutes, stirring occasionally.

6. Chop your chicken into 1/2” pieces and reintroduce to the skillet while the veggies are cooking. Cook and stir until the chicken is clear with no pink. (At least 165 degrees F)

7. Finish with a lime squeezed over the whole skillet and serve in warmed Tortilla Familia taco size tortillas.

*** For spice fiends, this is a not spicy recipe. Add more fire at your own peril and rev up the chiles…

Eating healthy was never so satisfying, combine ricotta cheese and spinach for a melty flavor bomb.

YOU'LL NEED:

•  1 (10 oz) package frozen spinach (thawed & drained + squished until dry)
•   1 tbsp olive oil
•   3 cloves garlic
•   ½ cup green onions

•   2 cups shredded Monterey Jack cheese
•   1 cup ricotta cheese
•   ½ cup sour cream
•  1 (18 oz) can of your favorite enchilada sauce
•  10 (6 “) taco size Tortilla Familia tortillas

1. Preheat the oven to 375 degrees F

2. Heat saucepan to medium and add 1 tbsp olive oil. Cook sliced green onions & minced garlic until softened (about 3 minutes). Add the spinach and cook another 5 minutes. Take the skillet off the burner and mix in 1 cup Monterey Jack, the sour cream, and the ricotta cheese.

3. Warm a 6” Tortilla Familia tortilla in a skillet on medium for about 15 seconds. Lay flat and spoon in the cheesy spinach mixture (about 1/4 cup), the roll it up and stick into a 9x13 baking dish. Make sure the seam is facing down! Repeat this process with all 10 tortillas then douse them in enchilada sauce and garnish with the rest of the Monterey Jack.

4. Bake for 10-15 minutes. Check that the cheese is slightly browned and the sauce is bubbling. Take out and cool before serving. Your familia will be salivating!

Let the kids pick their favorite fillings and fry up the perfect personal pan dessert for everyone in the familia. We like ours filled with chocolate chips, honey & peanut butter, then sprinkled with sugar & cinnamon and crisped in a skillet. Easy and delicious.

YOU'LL NEED:

• 3 tbsp butter
• 2X each person (6“) flour Tortilla Familia tortillas

CHOOSE FROM:

•  chocolate chips
•  peanut butter
•  Nutella
• banana slices
•  cinnamon
•  honey
•  marshmallows
• squeezable chocolate/caramel/butterscotch sauce

1. Preheat your grill (or skillet) to medium-high. Spray with your choice of cooking spray or coat thinly with butter.

2. Brush melted butter on one side of a tortilla and stick on the grill, buttered side facing down. Now layer in your fillings, a few dollops of peanut butter with chocolate chips sprinkled over…or Nutella and slices of banana?

3. Once the bottom tortilla is loaded up, put another one on top to create your quesadilla. Brush the top with a little more butter and sprinkle some fairy dust (cinnamon or sugar) on.

4. Grill for about 3 minutes, then flip and cook the other side for another 3 minutes (Or until golden with gooey insides)

5. Decorate with sprinkles, sauce, honey…let your imagination run wild.

6. Use a pizza cutter to cut it into wedges and eat immediately!

Heard enough? Once you’ve tried our tortillas, we’re pretty sure you’re going to want some more. They are such a staple of Mexican cuisine, not to mention all the delicious tex-mex and radical new recipes that are born when people get together and start experimenting.
