There’s a restaurant in Seattle, WA that invites people to bring their infants in and see how they compare to the giant burritos they serve up. There’s now a wall in the restaurant with photos of over 300 babies and their burrito counterparts. Okay, so now it’s your turn. One of the best things about Burron is that it can be used in so many different recipes. Plus you can load it up and really make your meals count. Try using it as a wrap for supreme burritos or monster quesadillas. Or even as a super thin crust for a Mexican pizza. You can also stuff it with veggies and cheese for a delicious (and substantial) vegetarian meal. The possibilities are endless, but here are a few specific ideas:

MIGHTY CHORIZO BREAKFAST BURRITO

If you haven’t tried it yet, chorizo is where it’s at. A spiced, fermented, and cured pork sausage from Spain, this meat will give you another reason to wake up in the morning. 

INGREDIENTS: 

• 3/4 lb chorizo sausage

• 1/2 chopped red onion

• 1/4 can green chiles

• 4 eggs

• 1 cup shredded Manchego cheese

• 2 Burron size tortillas

  1. Drizzle a little olive oil over skillet and warm to medium high heat. Remove sausage casing and crumble chorizo into pan, cook until browned, then add chopped onion and 1/4 can of green chile peppers. Sauté until onion is soft. 
  2. Crack eggs and stir in bowl, then mix into skillet with the chorizo. Turn the heat down a touch and stir in eggs. Cook until eggs are scrambled.
  3. In another skillet or in the microwave, heat up your Burron size tortilla. Fill each one up with chorizo then sprinkle generously with Manchego cheese. Wrap with tender care then ENJOY!

MEGA-QUESADILLA

Another great way to use Burron, meet the MEGAquesadilla. Say hello to golden melted goodness sandwiched between toasty Burron-sized tortillas and layered with as many extras as you can dream up. At 13”, this quesadilla makes feeding the familia easier than ever. The beauty of quesadillas is their simplicity, as long as you have tortillas, cheese, and a few fixings (guacamole, salsa, pico de Gallo, sour cream…) you have a complete and satisfying meal. 

And after a busy day doing your thing, simple is sacred. With the quality of Tortilla Familia tortillas, you can relax in the knowledge that the base of your meal is as healthy, fresh, and authentic as a homemade tortilla.  

Here’s one of our favorite combinations, but feel free to add or take away whatever fillings you fancy. Oh, and don’t worry, you don’t have to share:

POPPING JALAPEÑO QUESADILLA

Addicted to jalapeño poppers and want to make your own? This combination of jalapeño spice with cream cheese and toasty tortilla will have you saying ‘jal-lelujah!’

INGREDIENTS: 

• 6 jalapeño peppers

• 1 tbsp butter

• 3 tbsps cream cheese

• 3/4 cup shredded Mexican cheese blend

• 2 Burron size tortillas

  1. Preheat the oven, turn to broiler setting. Use butcher’s paper or foil to line a 13” X 9” baking sheet. 
  2. Prepare jalapeños, cut stems, slice in half lengthwise and remove seeds. (Be careful, sometimes they can irritate skin. You might want to use gloves) Then place cut-side down in the baking tray.
  3. Broil peppers for about 10-15 min, make sure the tray is about 6” from the heat source. Your little poppers should be bubbling with blackened skin.
  4. Immediately place the peppers in a sealable plastic bag to let the steam loosen their skins. After about 15 min they should be ready to process. Remove skin and chop the jalapeños. 
  5. Now soften your cream cheese for a few seconds in the microwave and then spread on one Burron size tortilla. Layer the jalapeños in and cover with the cheese. Cover with the other Burron tortilla and brush some softened butter on top. 
  6. Heat your frying pan on med-low and fry the bottom of the monster quesadilla for 3 min. Use a plate to flip it over and fry the other side for another 3 min.
  7. Use a pizza cutter to cut into wedges and enjoy! 

Cooking hack: For ultimate flavor, broiling the jalapeños is best; but if you’re short on time you can sub a can of sliced jalapeños and still get a pretty tasty result!

What does this mean for you? Burron tortillas are much healthier than the grocery store wannabes that are laced with chemical preservatives. (Not to mention the huge difference in FLAVOR!) TAKING CARE OF YOUR BURRON TORTILLAS

When they arrive take them out and separate each tortilla to keep them from sticking together. Next, prep two gallon-sized freezer bags and place the tortillas that won't be used in the next month in the freezer and refrigerate the rest. Refrigerated, Burron will last for 2-3 weeks if properly stowed upon arrival. Frozen, the tortillas will last 4-6 months in your airtight ziploc. They’re super easy to freeze and defrost without losing any of their goodness, so don’t be afraid to buy in bulk! 

Finally, when you are ready to use them, defrost tortillas either in the fridge or on the counter top - both work just fine.

HEATING THINGS UP

For maximum flavor, it’s best to serve your Burron tortillas warm. There are several different methods to heat them, each of which can be ideal depending on your preference and needs. 

We usually like to toast our tortillas on the stove. You don’t need any oil, just turn your skillet up to medium-high and cook Burron for about 30 seconds on each side. If you want extra crispiness, brush a little butter on the pan before you fry. 

Another option is to cook them in the microwave. This way you can warm up to 5 tortillas at a time. Layer them on a microwavable plate and cover with slightly damp paper towel. Now cook in 20 second blasts, checking to see that the tortillas are warmed through. This option can be good for fiestas when you want to get a bunch of tortillas ready at once. 

Finally, you can use the oven if you want to heat a multitude of tortillas at one time. Create little bundles of five and wrap in tinfoil. You can make as many bundles as will fit in your oven and get all the tortillas toasting together. Preheat to 350 degrees F and cook your Burron for about 15 minutes or until warmed through.
